Smells That Take You Back to the School Cafeteria

A school cafeteria in the 1990s had a smell unlike almost anywhere else. It was not one pleasant aroma, but a mixture of food, cleaning products and many children eating lunch at once. Years later, any part of that mixture can bring the whole room back.

The first smell often arrived before the food: floor wax. Its sharp lemon or pine scent mixed with something like warm plastic or rubber. Add the squeak of sneakers on the polished floor, and the memory is almost complete.

Then came the cleaning spray. Older elementary school students were sometimes asked to wipe down the tables after lunch. The spray was usually mixed with enough water to soften its chemical smell, but it still stayed on their hands long after the tables were clean. Missing a little class for lunchroom duty made the job feel surprisingly important.

The mop bucket contributed a less pleasant scent. Spilled food was unavoidable, and the bucket often seemed to contain dark gray-brown water. Its damp, slightly sweet smell suggested mildew and wet cloth. Students quickly learned not to sit too close to the cleaning closet.

School pizza had its own aroma too. It smelled of yeast, reheated cheese and the industrial ovens that kept it warm. The slices were often greasy enough to require a napkin, but that heavy smell was part of what made cafeteria pizza instantly recognizable.

Milk also smelled different when it came from a paper carton. Opening one released a mixture of cold milk and damp cardboard. Students who reached the cafeteria early might find chocolate milk, which could make an ordinary lunch feel like a small victory.

Finally, there were tater tots. Their fried-potato smell belonged so completely to school lunch that many people rarely encountered it anywhere else. One breath can still bring back trays, lunch lines and crowded tables.

None of these smells is especially wonderful on its own. Some are not pleasant at all. Yet together they recall a time when lunch followed a bell, friends waited at the same table and the biggest question was what had appeared on the tray that day. Nostalgia does not always smell delicious. Sometimes it smells like floor wax, warm pizza and a paper carton of milk.
